I do this by sketching with the grain and around knots and cracks to strike a balance that works for the individual piece. The drawings are routed 3/8 deep into the wood, then the fun begins by selecting tiny individually cut wood triangles of various species to create mosaic patterns within the recessed area. The voids are filled with epoxy mixed with rosewood dust. I use caribbean rosewood dust because it is dark without being black, and warm toned yet neutral.
